Conchas (Mexican pan dulce)

Service Description

Conchas are yeasted Mexican sweet breads. The soft brioche bottom is sitting under a crunchy topping that is scored to look like a seashell. They are a popular breakfast treat. Join this class and learn to make your own fabulous sweet treat for holiday brunches. The class will occur in two sessions on a single day. Session 1: You'll make your dough, knead it, and prepare it for bulk fermentation. You'll also prepare the concha topping. This session will last approximately one hour. There will be a break in between while your dough goes through bulk fermentation. The break will last approximately 60 minutes. The class is across the street or around the block from a number of establishments to grab a quick bite. Session 2: You'll learn how to shape your dough into conchas and apply the topping. The rolls will proof for 30-45 minutes and then you'll score them in the seashell shape and put them in the oven to bake. This session will have "downtime" during the proof and during the bake. We'll do some clean up and answer questions, but you will have some idle time, too. Bring something to do or just chat and get to know your fellow bakers. This session will last approximately 90 minutes Each workstation is set up for a single person to make 5 conchas but may be shared with one other person if desired. You'll have to work the dough as a unit, no extra equipment or ingredients will be available.

For Local and Online Classes: To cancel or reschedule, please contact me at least 5 days in advance. A full refund can be offered only if 5 days notice is given. A credit toward a future event or a transfer to a friend is available up to 2 days before the event. For Private Events: Please notify me at least 3 weeks prior for full refund, 7 days prior for credit toward a future event or refund minus deposit. If cancelling 6 days or less prior to the event no refund or credit is available.
